1 lb. carrots, peeled

3 Tb coconut oil

3 Tb rice vinegar

1/3 cup organic raisins (optional)

Shred carrots…melt coconut oil if necessary…pour coconut oil and vinegar over carrots. Mix well.

This is a simple recipe that tastes great and keeps in the refrigerator for days…makes for an very healthy snack or side dish!  Enjoy!
